Cinnamon Donuts

Ingredients:

250 g flour
75 g sugar
1 tablespoon baking powder
1 pinch of salt
125 ml milk
50 g butter
2 egg yolks
1 teaspoon ground cinnamon
Oil for frying

Instructions

Melt the butter and warm the milk (just make it hot, do not boil).
In a bowl, combine 25 g sugar, the hot milk and the baking powder and set aside for 10 minutes.
Then stir in the butter, the flour, the egg yolks and the salt.
Using a standing mixer with hook attachment, knead the mixture until you can form a ball of dough (about 5 minutes).
Cover your bowl with a cloth and let the donuts dough rest for 2 hours in a warm place (it should rise until double)
Line in a baking sheet with parchment paper and set aside.
Roll out the dough on a floured surface ( about 7-8 mm thick).
Cut with a floured donut cutter (you can keep the small circles to make mini donuts) and place on the baking sheet (let it rise again for 10 minutes)
In a small bowl mix the 50 g remaining sugar with cinnamon.
Preheat fryer oil to 180 ° C (350 ° F).
Place the donuts into the hot oil. Turn the donuts over as they rise to the surface.
Fry the donuts about 1 minute per side until golden brown. Drain the donuts on paper towels and dip in the sugar mixture.
